What is inside the torta

A pressed bun, chorizo, avocado and everything that will still fit. The order to place when one taco is not going to do it.

The torta is the sandwich the rest of the menu goes into. Same fillings as the tacos, same salsas, except now there is a bun holding it together and a plate of fries next to it.

It is the order for the day when one taco was never going to be enough, and it is the one people take back to a work truck because it survives the drive.

It starts with the bread

The bun is split and laid face down on the comal until the cut side is toasted and the crumb inside has gone warm and a little flattened.

That press is not for show. A soft bun gives up halfway through and you end up eating the filling with a fork. A pressed one holds to the last bite.

Then everything that fits

Refried beans go on first, straight onto the hot bread, which is what keeps the rest from sliding. Then the filling: chorizo in the one above, though carne asada, al pastor, carnitas and pollo all go in the same bun.

After that it is cheese, avocado, shredded cabbage and pickled jalapenos. Salsa is yours to choose, and it goes inside rather than on the side, because a torta is not a thing you dip.

How to order it

Ask for it with everything unless you have a reason not to. If you are taking it away, ask for the salsa in a cup and put it on when you get there.

The fries come with it. They are not a garnish and nobody has ever sent them back.
